Summer Strawberry Jam

easy for kids to make and enjoy,
nice new neighbor gift

1 pound strawberries
1 cup sugar
grated zest and juice of 1/2 lemon
pinch of salt

Wash, stem, chop strawberries. In medium sauce pan, combine everything and let sit for 15 minutes. Crush berries in pan with potato masher or wooden spoon.

Over medium heat, bring mixture to a boil. Cook, stirring frequently while mixture foams, then foam subsides and jam becomes dark and thick. Cook about 20 minutes to 220ºF. Transfer to lidded jar and refrigerate for a month or freeze up to a year.
