2 whole cleaned trout
1 Tbl. olive oil, divided
pinch each of coarse sea salt + pepper
1/2 lemon, thinly sliced
1/2 sweet onion, thinly sliced
1 clove garlic, minced
2 sprigs fresh rosemary
2 sprigs fresh thyme
Rub trout with olive oil, sprinkle with sea salt. Into cavity sprinkle salt and pepper and place half of lemon and onion slices, minced garlic and sprig of herbs.
Reduce preheated grill to low, placing fish on grill. Cook 6-7 minutes per side, until skin is browned and flesh flakes easily.
